QUICK AND EASY KETO DESSERT

I WANTED TO SHARE WITH YOU, THIS DELICIOUS DESSERT THAT MY AWESOME HUSBAND MADE FOR US. ALL YOU DO IS TAKE SOME HEAVY WHIPPING CREAM AND WHIP IT UNTIL IT LOOKS LIKE COOL WHIP, THEN YOU ADD IN SUGAR FREE CHEESECAKE PUDDING MIX THEN HE ADD A DASH OR TWO OF PUMPKIN SPICE SEASONING THEN IT MIX IT TOGETHER AND REFRIGERATED IT SO DELISH. KETO/ LOW CARB CHOCOLATE CHIP COOKIES

 TODAY WE ARE MAKING KETO OR LOW CARB CHOCOLATE CHIP COOKIES SO LETS GET STARTED 1 CUP ALMOND FLOUR 4 TBSP BUTTER 1 LARGE EGG 1/2 CUP ERYTHRITOL( I USE SWERVE) 10 DROPS LIQUID STEVIA 1/2 TSP BAKING SODA 1/2 TSP BAKING POWDER 1 TSP VANILLA EXTRACT 1/4 TSP XANTHAN GUM 1 OZ UNSWEETENED BAKERS CHOCOLATE 1/4 TSP SALT *** I AM USING LILYS CHOCOLATE INSTEAD OF BAKERS CHOCOLATE AND IF YOU DO FIND LILYS JUST DON'T ADD THE LIQUID STEVIA  COMBINE THE ALMOND FLOUR, BAKING SODA, BAKING POWDER, XANTHAN GUM AND SALT IN A BOWL AND SET ASIDE MELT BUTTER IN A SEPARATE BOWL  THEN ADD VANILLA EXTRACT, LIQUID STEVIA ( IF USING), ERYTHRITOL, AND AN EGG TO THE MELTED BUTTER AND COMBINE  ADD THE DRY INGREDIENTS TO WET INGREDIENTS IN TWO BATCHES AND MIX AND MAKE SURE THERE ARE NO CLUMPS  HERE IS THE SECOND BATCH  HERE IS WHAT IT LOOKS LIKE WHEN ITS COMBINED CUT THE BAKERS CHOCOLATE INTO AS BIG PIECES AS YOU WANT. PUMPKIN CREAM CHEESE MUFFINS #KETO

Today we are making pumpkin cream cheese muffin that are keto style so here we go. Here is what we are using 3 cups almond flour 1 heapng teaspoon baking soda 1/2 tsp salt 3 large eggs 15 oz can pumpkin puree 1/2 cup sugar equivalent substitute ( i use swerve) 4 tbsp melted butter 1 tbsp pure vanilla extract 1 tbsp pumpkin pie spice we are going to mix  together the almond flour, baking soda and salt in a bowl and set aside At this time im gonna put some cupcake papers into a muffin pan and set aside In a bowl, we are going to add eggs, pumpkin, swerve, butter, pumpkin pie spice and vanilla and im using a hand mixer to mix together until its well blended. PEPPERONI CHEESE PIZZA #KETO

I have been seeing others making pizza using cauliflower so i thought i would give it a go SO here we go I am using this package of cauliflower mash that you can find in the product section of walmart. It does have pieces of cauliflower and a package of cheese, bacon and chive spice mix. I am also gonna use some pepperoni and some mozzarella cheese. I am spraying my pizza pan with some coconut oil Then i pour the cauliflower into a microwave safe bowl and heat until soft. For this package i did 7 minutes. Then i mash it up and heat my oven to 375 i mix in the cheese, bacon and chive spice mix and spread it on the pizza pan and stick it in the oven to brown Then we add some cheese over the top and top with some pepperoni and stick it back into the oven until the cheese is melted Here is what it looks like out of the oven. This is so good. I do not have a time limit as far as how long to leave it in. Let me know if you make this.

KETO COCONUT BREAD

I found a keto friendly coconut bread So lets make it together Here is what you will need 7 large eggs 1/2 cup coconut flour 1/2 cup butter 1/2 tsp salt 1 tsp baking soda 1/2 tsp xanthan gum  Heat oven to 355F First thing is put the 7 eggs into a bowl and beat them for 1 to 2 minutes on high then we add the remaining ingredients and beat again until completely mixed then scape into a 9 x 6 loaf pan. Again i didn't have baking paper so i just sprayed with coconut oil Bake for 45 minutes. To check if its done, stick a skewer into the middle and if it comes out clean, then its done. Does this not look delish. I let this rest for a few before i cut this and let me tell you that this taste so delish and i don't have to worry about this bloating me up. LOVE THIS!!!

PUMPKIN SPICE FAT BOMBS

If you have followed me for a while then you know that i am on the keto diet. I have never felt better in my entire life. If you do not know what the keto diet is, its  low carb, high fat diet So here is a fall fat bomb that i made and the best part is that they are pumpkin spice, YES!!! Here is what we need 1/2 cup butter, at room temp. 1/2 cup cream cheese, ( yes full fat version) 1/3 cup pure pumpkin puree 4 drops liquid stevia pumpkin pie spice I started by using a pan, and since i didn't have baking paper, i just sprayed some coconut oil in the bottom In a bowl, we are going to measure the butter, and cream cheese whisk those together until smooth Add pumpkin and whisk together again Add the stevia, and the pumpkin pie spice and whisk again. then you spoon into your container Then you spread it out and place into the freezer for about 1 hour.
